Baked Garlic Parmesan Chicken


6 chicken thighs, bone in and skin on

1 pound of halved Baby Dutch potatoes

4 cups baby spinach

4 tbsp butter, unsalted and divided

1/2 tbsp Italian Seasoning

Salt and pepper to taste

Parsley for garnish


1 cup low sodium, low fat chicken broth

½ cup half and half

½ stick butter, unsalted

½ cup Parmesan Cheese, grated

4 cloves garlic, minced

1 tsp dried thyme

1 tsp dried basil

¼ cup flour

½ tsp dried oregano


Step 1:

Preheat the oven to 400* and lightly spray a 9×13 baking pan

Melt 2 tbsp of butter in a skillet and add the baby spinach

Step 2:

Cook until just wilted

Remove from the heat and set to the side

Step 3:

For the sauce, lower the heat to medium and add butter to the skillet, Add minced garlic and saute for 1 to 2 minutes

Whisk in the flour and cook for 1 minute

Step 4:

Slowly whisk in the chicken broth

Stir in the parmesan cheese and the half and half

Cook for another 3 to 5 minutes, then add the remaining spices

Step 5:

Season the chicken thighs with Italian seasoning, salt and pepper and place skin side up in the baking dish

Top the chicken with the halved potatoes and the cooked spinach

Step 6:

Cover with the sauce and place in the oven for 20 to 25 minutes, until the chicken is cooked all the way through

Step 7:

If desired, place under the broiler for a minute or two to crisp up the chicken skin.

Remove from the oven and serve hot
