Apple Cinnamon Cake
Ingredients
All-purpose flour – 2 cups
Baking powder – 1 ½ teaspoons
Ground cinnamon – 1 teaspoon
Salt – ½ teaspoon
Unsalted butter (softened) – ½ cup
Granulated sugar – 1 cup
Large eggs – 2
Pure vanilla extract – 1 teaspoon
Milk – ½ cup
Medium apples (peeled, cored, and diced) – 2
Optional: Chopped walnuts or pecans – ½ cup
Instructions
Prepare oven & dry ingredients:
Preheat the oven to 350°F (175°C).
Grease a 9-inch round cake pan and set aside.
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt until well blended.
Cream butter & sugar:
In a large mixing bowl, beat the softened butter and sugar with a hand or stand mixer until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract.
Combine batter:
Gradually add the dry mixture to the wet ingredients, alternating with the milk.
Mix just until combined—do not overmix.
Add apples & bake:
Gently fold in the diced apples and nuts (if using) until evenly distributed.
Pour the batter into the prepared pan and spread it into an even layer.
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
Cool & serve:
Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
Then transfer to a wire rack to cool completely before slicing and serving.
