Tasty Strawberry Bread
Ingredients
Bread:
¾ cup sugar
½ cup oil
½ cup milk
1 tsp vanilla
1 egg
1 tsp vanilla
2 tsp baking powder
¼ tsp salt
2 cups flour
2 cups strawberries
2 tbsp flour
Glaze:
2 cups powdered sugar
2 tbsp melted butter
1/3 cup finely diced strawberries
½ tsp vanilla extract
1 to 2 tbsp heavy cream
Instructions
Preheat the oven to 350*
In a medium bowl, stir together sugar, milk, oil, butter, egg and vanilla
In a separate bowl combine flour baking powder and salt
Add the dry ingredients to the wet ingredients and stir until just combined
In a small bowl toss together the flour with the strawberries
Gently fold the strawberries into the batter
Pour the batter into a greased loaf pan
Bake in a 350* oven for 50 to 55 minutes
Check for doneness by poking a toothpick in the center. If it comes out clean it is done.
Allow the bread to cool for 10 minutes, then turn it out onto a cooling rack until it is cooled completely
To make the glaze, combine the powdered sugar and the butter, the vanilla and the diced strawberries.
Mix until smooth
Spread the glaze on top of the bread and serve
