Hummingbird Bread Recipe

Ingredients

2 Ripe bananas, mashed

2 eggs

¾ cup oil

1 cup sugar

½ tbsp vanilla extract

1 tsp baking soda

¼ tsp salt

½ tsp cinnamon

1 ½ cups flour

½ cup Pineapple chunks, drained

½ cup Pecans, chopped

¼ cup raisins

Instructions

Preheat the oven to 350*

Grease a loaf pan generously

In a medium bowl whisk together the flour, salt, cinnamon, baking soda and sugar

Add in the eggs and oil and using a hand mixer blend well for 3 to 4 minutes

Fold in the vanilla, pineapple, pecans, mashed banana and the raisins stir well to distribute evenly

Pour batter into the prepared loaf pan

Bake for 45 minutes and check to see if it is done using a toothpick

If not, return to the oven and continue to bake

If the bread begins to brown too much, cover with aluminum foil

When done, remove from the oven, allow to cool for 20 minutes before turning out of loaf pan
