Rustic Italian Sausage with Peppers and Onions over Garlic Mashed Potatoes
Ingredients
For the Sausage and Vegetables
Italian sausage – 1 lb (mild or spicy, depending on preference)
Bell peppers – 2, sliced (any color, or a mix for variety)
Onion – 1 large, thinly sliced
Garlic – 3 cloves, minced
Olive oil – 2 tablespoons
Dried basil – 1 teaspoon
Dried oregano – 1 teaspoon
Salt and freshly ground black pepper – to taste
For the Garlic Mashed Potatoes
Potatoes – 4 large, peeled and cubed
Milk – ½ cup (warm, for creaminess)
Butter – 2 tablespoons
Parmigiano Reggiano – ¼ cup, freshly grated
Instructions
Cook the sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it into bite-sized pieces, and cook until browned on all sides.
Add vegetables: Stir in the sliced bell peppers and onion. Cook for 6–8 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.
Season: Add the minced garlic, dried basil, and oregano. Cook for 1 minute more, just until fragrant. Season with salt and pepper to taste.
Prepare the mashed potatoes: Meanwhile, place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 20 minutes.
Mash and finish: Drain the potatoes and return them to the pot. Mash with milk, butter, and grated Parmigiano Reggiano until smooth and creamy. Adjust seasoning as needed.
Assemble and serve: Spoon the garlic mashed potatoes onto plates, then top generously with the sausage, peppers, and onions. Garnish with extra Parmigiano Reggiano if desired.
