Ground Beef, Potato, and Extra Hot Green Chile Stew

Ingredients

1 1/2 pounds ground beef

1 tablespoon oil or bacon grease, optional

1 small onion, diced

2 cloves garlic, minced, optional

2 tablespoons all-purpose flour

2 to 3 cups chopped hot green chile, roasted and peeled

3 medium potatoes, peeled and diced

4 cups water or beef broth

1 teaspoon salt, or to taste

1/2 teaspoon black pepper

1/2 teaspoon garlic powder, optional

1/2 teaspoon ground cumin, optional

Homemade flour tortillas, for serving

Instructions

Heat a large pot or deep skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.

If the beef is very lean, add a little oil or bacon grease. Stir in the diced onion and cook for a few minutes, until the onion begins to soften. Add the garlic, if using, and cook for another 30 seconds.

Sprinkle the flour over the browned beef. Stir well and let the flour toast for 1 to 2 minutes. This step helps thicken the stew and gives the gravy a deeper flavor.

Add the chopped green chile and diced potatoes. Stir everything together so the potatoes and chile are coated with the beef mixture.

Pour in the water or beef broth. Stir well, scraping the bottom of the pot so the toasted flour blends smoothly into the liquid.

Season with salt, black pepper, garlic powder, and cumin if using. Bring the mixture to a boil, then reduce the heat to low.

Cover and simmer for 25 to 35 minutes, stirring occasionally, until the potatoes are soft and the broth has thickened into a rich gravy.

Taste and adjust the seasoning if needed. If the stew is too thick, add a little more water or broth. If it is too thin, simmer uncovered for a few more minutes.

Serve hot with warm homemade flour tortillas.

Serving Suggestion

Spoon the hot beef, potato, and green chile stew into bowls, then serve with soft flour tortillas on the side. Tear off pieces of tortilla and use them to scoop up the tender potatoes, spicy green chile, and thick beef gravy.

This dish is also delicious with Mexican rice, beans, shredded cheese, chopped cilantro, or a squeeze of lime.
