Carrot Cake Roll With Cream Cheese Filling

OMG, this classic Easter dessert is perfectly moist, delicious and made with fresh carrots and stuffed with the most heavenly cream cheese frosting filling also a great way to enjoy the carrot cake without having to do a lot of decorating as to a regular cake !!

Ingredients:

– Egg: 3 (large)

– Vanilla

– Sugar: 2/3 C

– Vegetable oil: 2 TBSPs

– Shredded carrots: 2 cups

– White flour: 3/4 cup

– Baking powder: 1 teaspoon

– Cinnamon powder: half teaspoon

– Ginger and nutmeg powder: quarter teaspoon

For the cream:

– White cream cheese: 200 gr

– Powdered sugar: two cups

– Vanilla

– Butter : 60 gr (at room temperature)

Instructions:

1. I always set the temperature of my oven to 180 degrees before starting.

2. Next, I mix together the flour, baking powder and spices well, then I add the carrots. Next, you should mix them; set aside

3. At this point, the eggs, vanilla, and sugar should be beaten well until the mixture has doubled and the color fades.

4. And please add oil and mix a little.

5. You’ll want add the flour mixture and stir lightly using a whisk.

6. The mixture should be spread on a greased tray with a baking sheet that measures approx 20 cm x 40 cm. After that, put it in the oven for approx 12 minutes.

7. Now that it’s cooled and little frozen, you should take it out of the oven. On a slightly damp cloth, out it and start wrapping it with the cloth. Permit it cooled completely in the refrigerator.

8. To prepare the cream, you’ll want to beat the cheese, butter, vanilla and sugar well to combine. Afterwads, put it in the refrigerator to cool and freeze a little.

9. Once done, I take out the rolled cake from the refrigerator, rolling it out with attention. I find it very useful to start by applying a light layer of cream, leaving the end of the cake without greasing.

10. Always remember to re-wrap the cake as it was, making sure not to pul so to keep the cream inside. Finally, put it in the refrigerator for about 120 minutes. Once done, spray powdered sugar on the face and immediately serve.
