Old Fashioned 7 Minute Frosting

Ingredients:

2 large unbeaten egg whites

1 1/4 cup granulated sugar

Half a cup of cold water

1/2 teaspoon cream of tartar or 1 teaspoon corn syrup

1 teaspoon vanilla

Instructions:

Combine the egg whites, sugar, water, and cream of tartar in the top of a double boiler. Mix well.

Place over boiling water and whisk constantly until mixture reaches peaks. This will take at least 7 minutes, but most likely closer to 10.

Remove from the fire.

Add the vanilla and whisk until it’s thick enough to spread.

Makes 5-6 cups of frosting.
