Country Club Salad

Ingredients

For the Salad:

3 slices white bread – toasted until golden, then cut into cubes

2 cooked chicken breasts – chopped into bite-sized pieces

2 ripe avocados – peeled, pitted, and diced

1 cup corn – fresh or frozen (thawed if frozen)

½ pound cooked bacon – cooled slightly, then torn into pieces

1 cup beefsteak tomato – quartered and halved for chunky bites

1 head romaine lettuce – cleaned, dried, and chopped

For the Dressing:

½ cup mayonnaise – creamy base for the dressing

2 tablespoons rendered bacon fat – for smoky richness

4 teaspoons white vinegar – adds brightness

1 teaspoon granulated sugar – balances flavors

½ teaspoon granulated garlic – for subtle depth

3 tablespoons fresh chives – finely chopped (plus extra for garnish, optional)

Kosher salt and freshly cracked black pepper – to taste

Instructions

Step 1: Make the Dressing

In a mixing bowl, whisk together the mayonnaise, bacon fat, white vinegar, sugar, granulated garlic, and chopped chives until smooth and well blended.

Season with salt and freshly cracked black pepper to taste.

Step 2: Reserve Garnish Ingredients

Set aside a small portion (about 1–2 tablespoons) of each salad component—chicken, avocado, corn, bacon, tomato, and toasted bread cubes—to use as a garnish later.

Step 3: Assemble the Salad

In a large bowl, combine the romaine lettuce, corn, bacon pieces, tomatoes, avocados, chicken, and toasted bread cubes.

Drizzle with about three-quarters of the dressing and toss gently until everything is evenly coated.

Step 4: Garnish and Finish

Transfer the salad to a serving platter.

Scatter the reserved ingredients over the top for a fresh, colorful finish.

If desired, sprinkle with extra chives.

Step 5: Serve

Enjoy immediately as a hearty main dish or as a centerpiece for a shared meal.
