White Bean And Ham Soup

Ingredients:

1 tablespoon avocado oil

1/2 cup chopped onion

1/2 cup chopped celery

1/2 cup chopped carrot

2 teaspoons minced garlic

1 carton low sodium vegetable broth

1 bay leaf

1 teaspoon fresh minced rosemary

Seasonings of your choice (I used Italian seasoning, a dash of no salt lemon pepper, vegetable soup base, dash of chicken bouillon powder)

1 cup diced ham

1/2 can undrained no salt added great northern beans

1 cup fresh spinach, stems removed

Instructions:

Sauté onion, carrots & celery for 10 minutes on medium heat

Add seasonings

Add garlic and sauté 2 minutes

Add broth and 2 cups water & bay leaf

Bring to a boil

Cover & simmer until vegetables are tender

Add white beans & ham, simmer for 15 minutes

Add spinach, simmer until wilted
