How to make Pumpkin Ravioli

Ingredients:

Pumpkin Filling:

Yields 24 Raviolis made in a Rav mold.

1 15oz can (small) Pure Pureed Pumpkin *Not Pumpkin Pie Filling* I used Libby’s.

1/4 tsp fresh grated Nutmeg

2 1/2 Tbls Brown Sugar

1/2 tsp Salt

1/4 tsp fresh ground Pepper

Instructions:

Line a mesh strainer with paper towels and scoop can of Pumpkin on to towels

Place more paper towels directly on top of Puree to absorb excess liquid.

Place in a bowl and refrigerate overnight before mixing in other ingredients.

Tips:

If Freezing, place on a sheet pan and pop in to the freezer for 3 hours before placing them in to a Ziplock bag before returning them to the freezer to cook later.

My sauce will be Brown Butter sauce with crispy Sage leaves and chopped, toasted Pecans.
