Creamy Andouille Sausage, Cannellini & Kidney Bean Soup garnished with Reggiano Parmigiano

Ingredients:

1 package (5 Sausages) Andouille Sausages or a Sausage of your choice, cut in to 1/2″ rounds

1 sm. Onion, diced

2 stalks Celery. diced

2 Carrots, diced

3 cloves Garlic, minced

1 Tbls Canola Oil

1/4 cup Flour

1 Tbls Red or White Miso Paste, adds depth of flavor

3 cups Chicken Stock

3 cups Milk, reduced fat or whole

1/4 tsp ground Sage

8 oz Cooked chopped Spinach

1 15 oz can Cannellini Beans, drained

1 15 oz can Dark Kidney Beans, drained

Pepper to taste

*Salt. If using Miso in the recipe you may not need to add Salt

Instructions:

Brown Sausage rounds in oil for 5 minutes

Add in Onion, Celery and Carrots, cook until soft

Add minced Garlic, cook for 3 minutes

Stir in Miso paste if using

Add Flour to Veggie and Sausage mixture, cook 3 minutes

Slowly add in Chicken stock, then Milk

Add in Sage and Spinach, cook for 15 minutes.

Add in drained Beans, gently simmer on low for 1/2 hour.

Garnish with Parsley & Parmesan
