Pineapple-Orange Sunshine Cake
How to make Pineapple-Orange Sunshine Cake
Ingredients
1 box yellow cake mix
5 eggs, large
1 small box instant vanilla pudding mix
1 can Mandarin Oranges, drained and in segments
2 tsp orange extract
⅓ cup oil
Topping:
1 small box instant vanilla pudding mix
1 container of Cool whip, 8 ounces
8 ounces drained and crushed pineapple
Mandarin Orange segments for garnish if desired
Instructions
Preheat the oven to 350* and prepare 2 9 inch round cake pans
Mix the cake ingredients together until smooth and well combined
Pour batter evenly between your two greased cake pans
Bake for 20 to 25 minutes, until cakes are done when toothpick tested
In another mixing bowl mix together the crushed pineapple and the box of instant vanilla pudding mix
Gently fold in the whipped topping and be sure to combine well
Place one layer on a cake plate
Add a layer of icing to the top of the first layer
Place the second layer on the top
Cover the top and sides of the cake
Garnish with Mandarin Orange Segments if desired, you can also add pieces of pineapple if desired.
