Old-Fashioned Blueberry Buckle
Ingredients
For the Buckle
2 cups cake flour
1 teaspoon baking powder
½ teaspoon salt
4 tablespoons butter, softened
¾ cup sugar
1 egg
½ cup whole milk
1 teaspoon vanilla extract
3 cups fresh or frozen blueberries
For the Streusel Topping
½ cup sugar
⅓ cup cake flour
½ teaspoon cinnamon
4 tablespoons cold butter, cubed
Instructions
1. Prepare the Oven and Pan
Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch (23×23 cm) baking dish and set it aside.
2. Mix the Dry Ingredients
In a medium bowl, whisk together the cake flour, baking powder, and salt until well combined.
3. Cream the Butter and Sugar
In a separate bowl, beat the softened butter and sugar until light and fluffy.
Add the egg and vanilla extract, mixing until the batter becomes smooth and creamy.
4. Combine Wet and Dry Mixtures
Add the dry ingredients to the butter mixture in alternating portions with the milk, mixing gently after each addition.
Stir only until everything is just incorporated—avoid overmixing.
5. Fold in the Blueberries
Gently fold the blueberries into the batter, taking care not to crush them.
6. Transfer to the Baking Dish
Spread the batter evenly into the prepared baking pan.
7. Make the Streusel Topping
In a small bowl, combine the sugar, cake flour, and cinnamon.
Add the cold, cubed butter and use your fingers or a pastry cutter to blend until the mixture forms coarse, crumbly pieces.
Sprinkle the streusel evenly over the batter.
8. Bake the Buckle
Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
9. Cool and Serve
Allow the buckle to cool for at least 10 minutes before slicing.
Serve warm or at room temperature. For an extra indulgent touch, add a scoop of vanilla ice cream or a dollop of whipped cream.
