Nachos With Guacamole

Ingredients

2 ripe avocados, peeled and chopped

2 Tbs. fresh lemon juice

2 cloves garlic, minced

1⁄2 tsp. salt

2 Tbs. chopped cilantro

24 large corn tortilla chips

3⁄4 cup canned vegetarian refried beans

6 oz. shredded Jalapeño Jack cheese

Instructions:

Preheat oven to 450°F. In medium bowl, combine avocados, lemon juice, garlic and salt; mash with fork. Set guacamole aside.

Spread each chip with thin layer of beans. Arrange on baking sheet and sprinkle with cheese. Bake until cheese is melted, about 5 minutes. Serve with guacamole.
