Italian Style Prime Rib Roast
Ingredients
For the Italian-Style Prime Rib Roast
1 prime rib roast, about 4–5 pounds
1 tablespoon Worcestershire sauce
¼ teaspoon dried parsley
¼ teaspoon Italian seasoning
¼ teaspoon dried basil
¼ teaspoon freshly ground black pepper
1 teaspoon salt
Garlic powder, as needed for seasoning
Onion salt, as needed for seasoning
For the Au Jus
1 beef bouillon cube
1 cup hot water
1 packet prepared au jus mix, optional, for extra sauce
Instructions
Preheat the Oven:
Preheat your oven to 450°F (230°C).
Bring the Roast to Room Temperature:
Remove the prime rib from the refrigerator before cooking and allow it to sit at room temperature so it cooks more evenly.
Prepare the Seasoning Blend:
In a small bowl, combine the dried parsley, basil, Italian seasoning, black pepper, and salt. Mix well and set aside.
Sear the Prime Rib:
Place the prime rib roast fat-side up on a rack inside an ungreased roasting pan. Roast at 450°F for 15 minutes to develop a flavorful browned exterior.
Lower the Oven Temperature:
Reduce the oven temperature to 250°F (120°C).
Season the Roast:
Carefully remove the roast from the oven and brush or rub the Worcestershire sauce over the entire surface. Generously season with garlic powder and onion salt, rubbing the seasonings evenly over all sides.
Sprinkle the prepared herb mixture over the roast and gently rub it into the meat.
Slow-Roast the Prime Rib:
Return the roast to the oven and cook for approximately 15 minutes per pound, or until a digital meat thermometer inserted into the thickest part reaches about 115–120°F for medium-rare.
Rest the Roast:
Remove the prime rib from the oven and transfer it to a cutting board or serving platter. Allow it to rest before slicing so the juices can redistribute throughout the meat.
Prepare the Au Jus:
Skim excess fat from the pan drippings. Dissolve the beef bouillon cube in 1 cup of hot water, then stir the mixture into the roasting pan drippings to create a flavorful au jus.
If you would like additional sauce, prepare an au jus packet according to the package directions and combine or serve it alongside the homemade pan juices.
Adjust Individual Servings if Needed:
For guests who prefer their prime rib more well-done, heat some of the au jus in a skillet. After slicing the roast, briefly place individual slices in the hot au jus until they reach the desired doneness.
Serve:
Slice the prime rib and serve warm with the prepared au jus spooned over the meat or served on the side.
