Italian Christmas Cookies (Ricotta Cookies)

Homemade Frosting Ingredients

6 tablespoons whole-milk ricotta cheese (such as Galbani)

1 tablespoon butter, melted (salted or unsalted)

3¾ cups confectioners’ sugar

1 teaspoon pure vanilla extract

4–6 tablespoons milk, as needed for consistency

Instructions

Preheat the oven to 350°F (175°C).

In a large mixing bowl, beat together the ricotta, melted butter, sugar, vanilla extract, eggs, and salt using a mixer on low speed until smooth and well combined.

Gradually mix in the flour and baking soda, stirring just until the dough comes together.

Drop small, teaspoon-sized portions of dough onto lightly greased baking sheets, spacing them slightly apart.

Bake for about 10 minutes, rotating the baking sheets halfway through for even baking. Remove from the oven and transfer the cookies to a wire rack to cool completely.

Yields approximately 4 dozen cookies.
