Notes:

Meat Choice: Feel free to substitute ground beef with ground turkey, chicken, or even a plant-based meat alternative for a healthier or vegetarian version.

Taco Seasoning: Adjust the amount of taco seasoning to suit your taste preferences. You can also use homemade taco seasoning if preferred.

Enchilada Sauce: Choose your favorite brand or make your own enchilada sauce for a more personalized flavor.

Tortillas: Use large tortillas and cut them in half for easier layering. Flour tortillas work best, but you can use whole wheat or corn tortillas for a different taste and texture.

Layering: Ensure the baking pan is well-greased to prevent sticking. Layering the tortillas and meat mixture evenly helps distribute flavors throughout the casserole.

Cheese: Fiesta blend cheese adds a nice melty texture and flavor, but you can customize with your favorite cheese blend like cheddar, Monterey Jack, or a Mexican cheese blend.

Baking Time: Bake until the cheese is fully melted and bubbly, typically around 20 minutes, but adjust based on your oven’s performance.

Garnish: Fresh chopped green onions add a pop of color and freshness. You can also add other toppings like sliced black olives, diced tomatoes, or cilantro based on personal preference.

Serving Suggestions: Offer sides like salsa, sour cream, guacamole, or additional chopped chilis for guests to personalize their servings.

Leftovers: This casserole reheats well, making it great for leftovers. Store leftovers in an airtight container in the refrigerator for up to 3 days.
