Chicken Lemon And Orzo Soup

Ingredients:

1.5 pounds of skinless, boneless chicken thighs

Heavy pinch of garlic and onion powder

5 teaspoons of better than bouillon roasted chicken

1 onion diced

1 celery rib diced

1 12oz bag of peas and carrots

1 tsp of dried Italian seasoning

5 cups of water

1 cup of orzo

Chopped fresh parsley

The zest and juice of 1 lemon

Salt and pepper to taste

Instructions:

In a pot saute the onions and celery set aside.

Now season the chicken with salt, pepper, garlic and onion powder and brown the chicken.

Remove and shred the chicken, now add the chicken to the pot of sauteed celery and onions along the better than bouillon, water and more seasonings if you like.

Bring to a boil then add the peas and carrots, Italian seasonings, lemon juice and the zest,and the orzo.

Cook for about 8 minutes, then turn to low once the orzo is tender remove from heat and enjoy!!
