Lemon Basil Chicken Soup
Ingredients
1 tablespoon olive oil
½ cup chopped yellow onions
2 celery stalks chopped
1 cup chopped red bell pepper
3 garlic cloves
½ lemon sliced
2 tablespoons chopped basil 4-6 leaves
¼ teaspoon ginger paste
½ teaspoon dried oregano
½ teaspoon dried thyme
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon paprika
1 cup chopped carrots
8-10 cups chicken broth
4 cups cooked chopped chicken breast
8 ounces egg noodles
Instructions:
Warm oil over medium high heat in a large pot.
Saute onions, celery, and red bell pepper until softened. (3-4 minutes.)
Add in garlic, cook 30 seconds, stir in herbs, seasonings, and carrots. Cook an additional 30 seconds before pouring in carrots, chicken broth, and sliced lemons.
Bring soup to a gentle boil and allow to cook for ten minutes before adding in the chicken and egg noodles.
Cook until egg noodles have softened.
Taste for seasonings and serve.
