Christmas Eggnog Bread
Ingredients
½ cup sugar
3 cups all purpose flour
4 tsp baking powder
1 tsp salt
½ tsp nutmeg
1 ¾ cup eggnog
¼ cup applesauce
1 egg
¼ cup oil, Canola or vegetable
1 cup golden raisins
½ cup chopped pecans
Instructions
Step 1:
Preheat the oven to 350*
Grease two loaf pans and set to the side
Step 2:
Combine the dry ingredients in a large bowl and whisk to blend together
Step 3:
In another bowl combine the egg, eggnog, applesauce and the oil
Stir the wet ingredients into the bowl with the dry ingredients, just until combined
Gently old in the raisins and the chopped pecans
Spoon the batter evenly between the two loaf pans
Step 4:
Bake for 40 to 45 minutes, until a toothpick comes out clean from the center when you test it.
Remove from the oven and cool for 10 minutes before removing from the pans and placing on the wire racks
