Homemade Caesar Dressing
Ingredients
½ cup creamy mayonnaise
2 teaspoons Dijon-style mustard
2 teaspoons Worcestershire sauce
2 garlic cloves, finely grated or crushed
3 tablespoons freshly squeezed lemon juice (from about 1 large lemon)
½ teaspoon fine salt
½ teaspoon freshly cracked black pepper
½ cup light olive oil (mild flavor, not extra virgin)
½ cup Parmesan cheese, freshly grated
Instructions
Combine the Base Ingredients
In a medium mixing bowl, add the mayonnaise, Dijon mustard, Worcestershire sauce, grated garlic, fresh lemon juice, salt, and black pepper.
Whisk everything together until the mixture becomes smooth and evenly blended.
Emulsify the Dressing
While whisking continuously, slowly pour in the olive oil in a thin, steady stream.
Keep whisking until all the oil has been added and the dressing becomes creamy and fully emulsified.
Add the Cheese
Stir in the freshly grated Parmesan cheese and whisk again until it is evenly incorporated into the dressing.
Store the Dressing
Pour the finished dressing into a clean jar or airtight container.
Cover with a lid and refrigerate until ready to use.
