Easy Sweet Potatoes in the Microwave

Ingredients:

Sweet potatoes (2 medium) – Naturally sweet and tender, perfect for quick microwave cooking

Olive oil (½ tablespoon) – Lightly coats the skin and enhances flavor

Butter – Added to taste for richness and creaminess

Salt & freshly ground black pepper – To season and balance the natural sweetness

Instructions

Prepare the Sweet Potatoes

Rinse the sweet potatoes thoroughly under cold running water to remove any dirt.

Pat them completely dry with a towel—dry skins help the oil adhere and prevent excess steaming.

Vent the Potatoes

Using a fork, pierce each sweet potato several times on all sides.

These small holes allow steam to escape safely while cooking.

Season the Skins

Rub the potatoes evenly with olive oil until lightly coated.

Season generously with salt and black pepper to enhance flavor.

Microwave

Place the potatoes on a microwave-safe plate.

Microwave on high for 5 minutes.

Test and Continue Cooking

Check doneness by inserting a fork into the center.

If the flesh is still firm, continue microwaving in 1-minute intervals until tender.

Most medium-sized sweet potatoes are done in 6–8 minutes total.

Finish and Serve

Carefully remove the hot potatoes from the microwave.

Slice lengthwise, fluff the flesh with a fork, and top with butter and an extra pinch of salt if desired.

Serve warm.
