Green Chile Crabby Shrimp-Stuffed Garlic Bread Bombs
Ingredients
1 French baguette, cut into thick slices
1 lb shrimp, peeled, deveined, and cooked (chopped into bite-size pieces)
1/2 cup lump crab meat (optional but highly recommended)
1/3–1/2 cup roasted green chiles, diced (Hatch or Anaheim work great)
2 tbsp olive oil
3 tbsp unsalted butter, melted
4 cloves garlic, minced
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tbsp chopped parsley or cilantro
Salt and black pepper, to taste
Pinch of red pepper flakes (optional, for extra heat)
Optional finish: squeeze of lime juice or drizzle of green chile sauce
Instructions:
Prepare the Garlic Bread
Cut the baguette into thick, sturdy slices ideal for stuffing.
Heat a skillet over medium heat, add a drizzle of olive oil, and toast the bread until crisp and golden on both sides. Remove from the pan and set aside.
Cook the Garlic Shrimp & Green Chiles
Using the same skillet, melt the butter over medium heat.
Add the minced garlic and cook briefly until aromatic.
Stir in the shrimp, diced green chiles, salt, pepper, and red pepper flakes. Cook just until everything is heated through and evenly coated with garlicky chile flavor.
Combine the Cheesy Seafood Filling
Transfer the shrimp mixture to a mixing bowl.
Gently fold in the crab meat, mozzarella, Parmesan, and chopped parsley or cilantro until well combined. The mixture should be creamy and evenly blended.
Fill the Bread
Spoon a generous amount of the seafood and cheese mixture onto each toasted bread slice, pressing lightly so it stays in place.
Broil Until Golden
Arrange the stuffed bread slices on a baking sheet.
Broil for 3–5 minutes, or until the cheese is melted, bubbling, and lightly browned.
Finish & Serve
Garnish with additional fresh herbs. If desired, finish with a squeeze of lime juice or a drizzle of green chile sauce before serving.
Optional Variations
Extra Southwest: Add cumin or smoked paprika
Creamier: Mix in 2–3 tbsp cream cheese
Spicier: Use hot Hatch green chiles or add diced jalapeño
Oven Method: Bake at 400°F (205°C) for 8–10 minutes instead of broiling
