Crockpot French Onion Meatloaf
Ingredients
Meatloaf Base
Ground beef — 2 lbs
French onion soup mix — 1 packet
Breadcrumbs — 1 cup
Large eggs — 2
Milk — ¼ cup
Flavor Add-Ins & Filling
Swiss cheese — 1 cup shredded, divided (plus extra for topping)
Onion — ½ cup, finely chopped
Worcestershire sauce — 1 tablespoon
Ketchup — ½ cup (optional)
Salt and black pepper — to taste
Instructions
Step 1: Mix the Meatloaf
In a large mixing bowl, combine the ground beef, French onion soup mix, breadcrumbs, eggs, milk, and 1 cup of shredded Swiss cheese.
Add the chopped onions, Worcestershire sauce, and salt and pepper.
Gently mix until everything is evenly blended, being careful not to overwork the meat.
Step 2: Shape and Transfer
Shape the mixture into a firm loaf.
Carefully place it into the bottom of the slow cooker.
If desired, spread ketchup evenly over the top.
Step 3: Cook Low and Slow
Cover and cook on Low for 6 hours, or until the meatloaf is fully cooked and the internal temperature reaches 160°F (71°C).
Slow cooking allows the onions to soften and the cheese to melt into the meat, keeping it tender and juicy.
Step 4: Add the Cheese Topping
About 15 minutes before serving, sprinkle additional shredded Swiss cheese over the meatloaf.
Cover and continue cooking until the cheese is melted and bubbly.
Step 5: Rest and Serve
Carefully remove the meatloaf from the slow cooker using two spatulas for support.
Let it rest for 5 minutes before slicing to help the juices settle. Serve warm and enjoy.
