Fresh-Baked Lemon Blueberry Treat
Ingredients:
For the Bread
1/3 cup melted butter
1 cup granulated sugar
3 tablespoons fresh lemon juice
2 large eggs
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
½ cup milk
2 tablespoons finely grated lemon zest
½ cup chopped walnuts (optional)
1 cup blueberries, fresh or frozen
For the Glaze
2 tablespoons lemon juice
1 tablespoon melted butter
1 cup powdered sugar
Instructions:
Step 1: Heat the Oven & Prepare the Pan
Set your oven to 350°F (175°C). Lightly grease a loaf pan so the bread releases easily after baking.
Step 2: Blend the Wet Ingredients
In a large mixing bowl, whisk together the melted butter, sugar, lemon juice, and eggs until the mixture turns smooth and well combined.
Step 3: Combine the Dry Ingredients
In another bowl, stir the flour, baking powder, and salt until evenly mixed.
Step 4: Bring the Batter Together
Add the dry mixture to the wet ingredients gradually, alternating with the milk. Mix gently—only until everything comes together without overworking the batter.
Step 5: Add Lemon & Berries
Fold in the lemon zest, walnuts (if using), and blueberries, making sure they’re spread evenly throughout the batter.
Step 6: Bake the Loaf
Transfer the batter to your prepared loaf pan and smooth the top. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: Make the Glaze
While the bread is baking, whisk together the lemon juice, melted butter, and confectioners’ sugar until silky and lump-free.
Step 8: Finish with Glaze
Let the loaf cool for a few minutes, then drizzle the warm glaze over the top so it seeps into every crevice.
Step 9: Slice & Enjoy
Allow the bread to cool fully before cutting into slices. Serve with tea, coffee, or enjoy it all on its own.
