Sausage and Peppers Skillet
Ingredients:
4 Italian sausages (mild or hot)
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
3 cloves garlic, minced
1 can (14 oz) diced tomatoes (optional for saucier version)
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Brown the Sausages
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook until golden brown on all sides, about 6–8 minutes. Transfer them to a plate and set aside.
Sauté the Vegetables
In the same skillet, pour in the remaining olive oil. Add the sliced peppers and onion, and cook until they begin to soften and caramelize slightly, about 5–6 minutes.
Build the Flavor
Stir in the minced garlic, oregano, crushed red pepper flakes (if using), salt, and black pepper. Cook for about 1 minute, just until fragrant.
Simmer Everything Together
Slice the browned sausages into thick pieces and return them to the skillet. If you prefer a saucier dish, stir in the diced tomatoes. Lower the heat and let everything simmer for 8–10 minutes, allowing the sausages to cook through and the flavors to meld.
Finish & Serve
Remove from heat, sprinkle with freshly chopped parsley, and serve immediately. Enjoy over rice, pasta, or alongside warm, crusty bread.
Pro Tip: For an extra layer of flavor, deglaze the pan with a splash of white wine before adding the tomatoes—this lifts all the browned bits from the pan and enriches the sauce.
