Sopa de Papa y Tortillas
Hearty Potato Soup with Stew Meat, served with warm tortillas
Ingredients (Serves 4–6)
1–1½ lbs beef stew meat, cut into bite-sized pieces
2 tablespoons vegetable oil
1 medium onion, diced
1½ teaspoons garlic salt (adjust to taste)
5–6 medium potatoes, peeled and diced
Water (enough to cover the ingredients)
Salt and pepper, to taste
Red pepper flakes or chile (optional, for heat)
Fresh tortillas or bread for serving
Instructions
Brown the Beef
In a large pot or Dutch oven, add the stew meat and cook over medium-high heat until browned on all sides.
Sauté Onions
Add the oil and diced onions to the pot. Season with garlic salt and cook for 4–5 minutes, stirring occasionally, until onions are soft and fragrant.
Add Potatoes and Water
Add the diced potatoes and pour in enough water to just cover all the ingredients. Stir gently.
Season and Simmer
Add additional garlic salt (or salt and pepper to taste). Bring the pot to a boil, then reduce heat to low. Cover and simmer for at least 20–25 minutes, or longer if desired. The longer it cooks, the more the potatoes will break down and naturally thicken the broth.
Final Touches
Taste and adjust seasoning. For added heat, sprinkle in red pepper flakes or serve with your favorite chile on the side.
Serve
Ladle the soup into bowls and serve hot with fresh tortillas or crusty bread.
