Pizza Enchiladas Ground Beef

Ingredients

For the Filling

1 pound lean ground beef – cooked and crumbled

1 cup yellow onion, finely diced

1 medium green bell pepper, diced

3 ounces pepperoni, roughly chopped

1 tablespoon fresh garlic, minced

⅓ cup pizza sauce – your favorite variety

1 tablespoon Italian seasoning blend

1 cup ricotta cheese – for creaminess

1 cup mozzarella cheese, shredded

⅓ cup cooked bacon, crumbled

8 large flour tortillas – soft and flexible

For the Topping

2 cups pizza sauce – for drizzling on top

2½ cups mozzarella cheese, shredded

3 ounces sliced pepperoni – for that classic pizza flair

¼ cup bacon, crumbled for a savory finish

Instructions

Preheat the Oven

Preheat your oven to 375°F (190°C) and lightly coat a baking dish or sheet pan with nonstick spray.

Cook the Ground Beef

In a large skillet over medium-high heat, add the ground beef and cook, breaking it apart with a spoon, until fully browned.

Add Vegetables and Pepperoni

Stir in the diced onion, green bell pepper, and chopped pepperoni.

Continue cooking for 4–5 minutes, until the veggies soften slightly.

Add Garlic and Seasoning

Add the chopped garlic and cook for another 1–2 minutes, stirring often, until fragrant.

Create the Filling

Remove the skillet from the heat.

Stir in the pizza sauce, Italian seasoning, ricotta cheese, shredded mozzarella, and crumbled bacon.

Mix until everything is well combined.

Assemble the Enchiladas

Lay the flour tortillas flat on a clean surface.

Spoon a generous amount of the filling down the center of each tortilla, then roll them up tightly.

Prepare for Baking

Arrange the rolled tortillas seam-side down in the prepared baking dish.

Top with Sauce and Cheese

Pour the remaining pizza sauce evenly over the enchiladas.

Sprinkle with shredded mozzarella, top with pepperoni slices, and finish with crumbled bacon.

Bake

Transfer the dish to the oven and bake for 20–25 minutes, or until the cheese is melted and bubbling with golden edges.

Serve

Let cool slightly before serving.
