Avocado Chicken Flautas with Honey Lime Dipping Sauce
Ingredients
For the Flautas
2 cups cooked, shredded chicken (use rotisserie or leftover chicken for ease)
1 ripe avocado, diced
1 cup shredded Monterey Jack or sharp cheddar cheese
¼ teaspoon ground cumin
Salt and freshly ground black pepper, to taste
8 small flour tortillas (taco-sized)
Vegetable oil, for shallow frying
Fresh cilantro, chopped (for garnish)
For the Honey Lime Dipping Sauce
3 tablespoons honey
Juice of 2 limes (freshly squeezed)
1 tablespoon olive oil
1 garlic clove, finely minced
1 tablespoon finely chopped fresh cilantro
Pinch of red chili flakes (optional, for heat)
Salt, to taste
Instructions
1. Prepare the Flauta Filling
In a large mixing bowl, combine the shredded cooked chicken, diced avocado, shredded cheese, cumin, and a pinch of salt and pepper. Gently toss the ingredients together until evenly mixed.
2. Assemble the Flautas
Place a few spoonfuls of the filling in the center of each flour tortilla. Roll each tortilla tightly into a log shape, keeping the seam side down to prevent unrolling.
3. Fry Until Crispy
Heat a thin layer of oil in a large skillet over medium heat. Working in batches, place the rolled flautas seam-side down in the pan. Fry until golden brown and crispy on all sides, about 2–3 minutes per side. Remove and drain on paper towels to remove excess oil.
4. Make the Honey Lime Dipping Sauce
In a small bowl, whisk together the honey, fresh lime juice, olive oil, minced garlic, chopped cilantro, and chili flakes (if using). Season with a pinch of salt, and stir until the sauce is well blended.
5. Serve
Arrange the hot flautas on a platter. Drizzle or dip in the honey lime sauce and garnish with fresh cilantro for an added burst of flavor and color. Serve immediately for the best crunch and taste.
