Bacon Ranch Chopped Salad
Ingredients
For the Salad:
3 to 4 cups finely chopped broccoli florets
3 to 4 cups finely chopped cauliflower florets
1/2 cup diced red onion
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper (or sweet red pepper)
1/2 cup finely sliced and diced carrots
1/2 cup sweet corn, drained (canned or fresh)
10 slices of bacon, cooked until crispy, drained, and chopped
1 cup shredded Colby Jack cheese
For the Dressing:
1/2 cup mayonnaise (see notes for light options)
1/2 cup sour cream
2 1/2 tablespoons dry ranch seasoning mix
Instructions:
Prepare the vegetables and mix-ins:
Finely chop the broccoli, cauliflower, carrots, and both types of bell peppers. Dice the red onion and drain the canned sweet corn. Place all ingredients in a large mixing bowl.
Add the bacon and cheese:
Stir in the chopped, cooked bacon and shredded colby jack cheese. Mix gently to combine with the vegetables.
Make the dressing:
In a separate small bowl, whisk together the mayonnaise, sour cream, and dry ranch seasoning mix until smooth and well blended.
Toss and chill:
Pour the dressing over the salad mixture. Toss thoroughly until everything is evenly coated. Refrigerate for at least 15–30 minutes before serving to allow the flavors to meld.
