Southern Pineapple Cheese

Ingredients:

For the Filling:

1 can (28 oz / 794g) crushed pineapple, well-drained, with ¼ cup juice reserved

1 jar (4 oz / 113g) diced pimentos, drained

⅔ cup granulated sugar, to balance the savory elements with sweetness

½ cup all-purpose flour, to thicken the fruit mixture

8 oz (225g) cream cheese, softened to room temperature for easy spreading

¼ cup reserved pineapple juice, to add moisture and enhance flavor

2 cups sharp cheddar cheese, freshly grated for bold, tangy richness

For the Topping:

½ cup crushed Ritz crackers, for a buttery, salty crunch

½ cup panko breadcrumbs, for extra texture and crispness

¼ cup unsalted butter, melted, to bind the topping and enhance flavor

(Optional: a pinch of salt and black pepper to season the topping)

Instructions:

Step 1: Prepare the Oven and Baking Dish

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or spread softened cream cheese across the bottom of the dish to form a base layer.

Step 2: Make the Topping

In a small bowl, combine the crushed Ritz crackers, panko breadcrumbs, and melted butter. Stir until evenly coated. Optional: season lightly with salt and black pepper. Set aside.

Step 3: Mix the Filling

In a large mixing bowl, stir together the drained crushed pineapple, diced pimentos, sugar, and flour. Mix until the flour is evenly distributed.

Step 4: Assemble the Casserole

Spread the pineapple mixture evenly over the cream cheese layer in the baking dish. Drizzle with ¼ cup of reserved pineapple juice for added moisture and flavor.

Step 5: Add the Cheese and Topping

Sprinkle the grated sharp cheddar cheese evenly over the pineapple layer. Then, distribute the prepared cracker and breadcrumb mixture over the top.

Step 6: Bake and Serve

Bake uncovered for 30–35 minutes, or until the cheese is bubbly and the topping is golden brown. Let cool slightly before serving. This dish is sweet, salty, cheesy, and Southern to the core!
