Ingredients:
1 T Olive oil
1 small onion, diced
2 cloves garlic, minced
2 Anaheim Chile’s
2 Jalapeños
1# Linguica
2 Cans Ranch Beans
2 Cans Ranch Beans w/ jalapeño
1 Cans Kidney beans, drained
1 Can White Beans, drained
1/2 Bottle Sweet Babay Ray’s Spicy Sweet BBQ Sauce (or your favorite brand)
1 t. Smoked Paprika
Black Pepper
OPTIONAL: Leftover rib meat, BBQ steak, Brisket
Instructions:
Step 1:
We smoke the linguica first, but this step is optional.
Step 2:
Wash peppers, then roast over an open flame to char the skin. Cool, then brush away the flaky charred bits. Chop chiles and set aside.
Step 3:
In a large pot, saute onions until slightly softened, over Medium heat.
Add garlic and sauté one minute.
Add sliced linguica and saute until sausage begins to brown up.
Add all Beans, any additional meat, and chiles.
Stir and increase heat until beans begin to boil, reduce to low and simmer for 40 minutes.
Add BBQ sauce and simmer another 30-45 minutes, stirring occasionally.
