Thai Inspired Fish Stew

Ingredients:

Chopped one onion

One jalapeno

One red pepper

About 6 cloves garlic

Tbsp fresh ginger (I put it through a garlic press).

2 carrots

Could really add anything.

Instructions:

Sauté in avocado oil everything above with tumeric, cumin, coriander, salt, pepper, and curry powder. Then add about 2 cups of chopped tomatoes and a small can of sauce.

4 cups of chicken stock. Got to a gentle boil.

Once carrots were done I add a can of coconut milk and some cayenne pepper.

Toss 2 cod filets (chopped up) in for about 5 minutes.

Add fresh cilantro right at the end (about a cup chopped).

Serve with lime slices on side.

Serve over cauliflower rice.
