Authentic Ceviche

Ingredients:

2 lbs shrimp cleaned and chopped into 5 sections

5 cucumbers peeled,seeded and diced

1 small red onion diced

5 Roma tomatoes seeded and diced

1 small carrot shredded

2 jalapeños diced, remove seeds if you don’t want spicy

2 serranos diced, remove seeds if you don’t want spicy

2 limes juiced

2 lemons juiced

Jugó maggi, 5 shakes

Cilantro chopped

Salt to taste.

1/2 tsp granulated garlic

Instructions:

Dice up onion, cucumber, tomato, serranos and jalapeños add to a large bowl.

Shred your carrot and chop your cilantro and add to the same bowl with veggies.

In a separate bowl juice lemons and limes add in chopped up shrimp cover with plastic wrap and place in fridge for 30-40 minutes or until pink.

Once shrimp is pink remove and discard juice, place shrimp in bowl with other ingredients, mix well add jugo maggi, granulated garlic and juice from 1 more lime and lemon and salt to taste.

Serve with tortilla chips or on a tostada with diced avocado.
