Taco Rice
Ingredients
1 lb ground beef
1 packet taco seasoning (or 2–3 tablespoons homemade)
2 cups water
2 cups Minute Rice (instant rice), uncooked
1 cup salsa (your preferred heat level)
1 cup shredded cheddar cheese
Instructions
Brown the Beef
In a large skillet over medium heat, cook the ground beef, breaking it apart with a spoon, until fully browned. Drain excess grease if needed.
Add Seasoning & Water
Sprinkle the taco seasoning over the cooked beef, then pour in the water. Stir to combine and bring the mixture to a boil.
Cook the Rice
Once boiling, stir in the uncooked Minute Rice. Reduce heat to low, cover, and simmer for about 5 minutes, or until the rice is tender and the liquid is absorbed.
Mix in Salsa & Cheese
Remove the lid and stir in the salsa and shredded cheddar cheese. Stir until the cheese is melted and everything is well combined.
Serve
Turn off the heat and serve hot! Garnish with chopped cilantro, sour cream, or jalapeños if desired.
