Parmesan Crusted Chicken Breasts With Garlic Mushroom Sauce

Ingredients:

2 Chicken Breasts fileted horizontally S&P

Granulated Garlic

1 cup Flour

3/4 cup Parmesan, grated & divided

1 lg. egg, beaten

4 Tbls Butter, divided

4 Tbls Olive Oil, divided

1 cup Mushrooms, sliced

1 small Onion, diced

10 Garlic cloves, 4 minced, 6 left whole S&P

1 cups Chicken Broth

1 1/2 cups Heavy Cream

1/2 cup Parmesan, grated

Parsley to garnish

Instructions:

Season fileted Chicken Breasts

Season flour using the same seasonings and mix in 1/4 cup grated Parmesan to flour

Dip Chicken pieces in egg and dredge in seasoned flour/cheese mixture

Working in batches, heat 2 Tbls each of Butter and Olive Oil in frying pan

Brown Chicken on each side for about 4 minutes, remove and cover with foil, repeat with second batch using 2 more Tbls of Butter & Oil

Brown sliced Mushrooms in same pan that was used for chicken until golden brown, remove from pan

On med/low heat add diced onions, cook for 3 minutes stirring often.

Add all of Garlic, whole and minced in with Onions, cook for 5 more minutes

Add Chicken broth in, reduce by about half.

Add Heavy Cream in and stir thoroughly until bubbly.

Add 1/2 cup Parmesan cheese in, stir until melted.

Add the Chicken and Mushrooms back in, cook for about 5 more minutes until sauce is thickened.

Taste for S&P, remove and serve

*It may seem like a lot of Garlic but by leaving some of the pieces whole they just develop a sweet subtle flavor, it is the minced Garlic that flavors the sauce.
