Hearty Campfire Stew
Ingredients:
1 lb (450 g) ground beef
2 cups (480 ml) beef broth or stock
1 can (15 oz / 425 g) diced tomatoes, with juices
2 medium potatoes, peeled and chopped
1 cup corn kernels (fresh or frozen)
½ cup green peas (fresh or frozen)
½ cup green beans, trimmed and cut into bite-sized pieces
1 small yellow onion, finely diced
2 cloves garlic, minced
1 teaspoon paprika (smoked or sweet)
½ teaspoon ground cumin
Salt and freshly ground black pepper, to taste
Sliced corn on the cob (optional, for rustic presentation)
Instructions:
Brown the beef
In a large pot or Dutch oven, cook the ground beef over medium heat along with the diced onion and minced garlic. Sauté until the beef is browned and no longer pink, about 6–8 minutes. Drain any excess fat.
Build the base
Stir in the diced tomatoes, beef broth, chopped potatoes, paprika, cumin, salt, and pepper. Bring the mixture to a boil.
Simmer for depth
Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25–30 minutes, or until the potatoes are tender when pierced with a fork.
Add remaining vegetables
Add the corn, peas, and green beans. Simmer uncovered for another 10 minutes, allowing the vegetables to heat through and the flavors to meld.
Serve and enjoy
Ladle the stew into bowls and serve hot. For a rustic presentation, add sliced corn on the cob to each bowl. Pairs perfectly with cornbread or warm biscuits.
