Crockpot Goulash
Ingredients
1 green pepper, diced
1 medium yellow onion, diced
2 pounds ground beef, lean
1 red pepper, diced
2 cans tomato sauce, 14 ounce each
2 cans diced tomatoes, drained
2 cups beef broth, low sodium
1-16 ounce box macaroni noodles
2 tsp Italian Seasoning
1 clove garlic, freshly minced
1 tsp salt
½ tsp black pepper
1 cup frozen peas or frozen corn
Instructions
In a skillet, brown the ground beef, sprinkle with the spices, until cooked completely
Add the onions and pepper and cook until tender
Place the ground beef into the crockpot with the onions and peppers
Add the 2 cans of tomato sauce and the two cans of diced tomatoes into the crock pot
Add the cup of vegetables and the 2 cups of beef broth.
Stir all together so it is combined well
Set heat on low and cook for 4 hours
Stir in the macaroni when there is 30 to 40 minutes remaining
Check the macaroni for doneness, if needed cook about 10 more minutes
When there is five minutes left, this can be topped with 1 cup of shredded cheese and covered once again to cook for 5 minutes.
Serve hot with cheesy garlic rolls, a salad
