Carne de Puerco Ranchero con Papas

Ingredients:

2 lbs country-style pork ribs, cut into bite-sized pieces

4 medium potatoes, peeled and diced

3 ripe tomatoes, chopped

1/2 large onion, chopped

2 serrano peppers, chopped

2 cloves garlic, minced (or 1 tsp granulated garlic)

1 cup water, plus extra as needed

1 tablespoon chicken or pork bouillon (Knorr)

1/2 teaspoon ground cumin

Salt and pepper to taste

1/4 cup fresh cilantro, roughly chopped

Instructions:

Cook the Pork:

In a large pot, add the cut-up pork and 1 cup of water. Season with granulated garlic, salt, and pepper. Cook over medium heat, allowing the water to evaporate. Stir occasionally to prevent sticking.

Once the water evaporates, the pork will begin to brown in its own fat. Continue to cook until the pork is golden and slightly crispy.

Sauté the Potatoes:

Add the diced potatoes to the pot with the pork. Sauté the potatoes with the pork, allowing them to brown slightly, about 5-7 minutes.

Add Vegetables:

Stir in the chopped tomatoes, onions, and serrano peppers. Cook everything together, stirring occasionally, until the onions become translucent, about 5 minutes.

Simmer:

Add 1 cup of water to the pot along with the chicken or pork bouillon and cumin. Stir well to combine.

Reduce the heat to low and let the mixture simmer, covered, for about 20-25 minutes, or until the pork and potatoes are tender. Stir occasionally and add more water if needed to prevent sticking.

Finish and Serve:

Once the meat and potatoes are tender, adjust the seasoning with salt and pepper to taste.

Stir in the chopped cilantro, then remove the pot from heat.
