Blueberry Biscuits

Ingredients:

½ cup unsalted butter, cold and cubed

3 ¼ cups all-purpose flour

3 tablespoons granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon fine sea salt

1 cup whole milk, cold

1 ½ cups frozen blueberries (keep frozen, do not thaw)

2 tablespoons melted butter, for brushing tops

Instructions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Cut the chilled butter into small cubes and work it into the dry ingredients using a pastry cutter or fork until the mixture resembles coarse crumbs.

Pour in the milk gradually, stirring until the dough just comes together. Be careful not to overmix.

Gently fold in the frozen blueberries, keeping them whole and evenly distributed.

Transfer the dough onto a floured work surface. Flatten it gently and fold it over a few times to build layers. Add flour as needed if it’s sticky.

Roll the dough out to about 1 inch thick. Cut biscuits using a round cutter or knife.

Place biscuits on the prepared baking sheet. Brush the tops with melted butter for a golden finish.

Bake for 15–18 minutes, or until lightly golden and set.

Serve warm with a drizzle of honey or a pat of butter. Perfect for breakfast or brunch!
