Garlic Shrimp Spaghetti
Ingredients
8 ounces dry spaghetti noodles
4 tablespoons unsalted butter, divided
1 pound large shrimp, peeled and deveined
1/4 teaspoon fine sea salt
1/2 teaspoon crushed red pepper flakes
4 garlic cloves, finely minced
2 tablespoons fresh lemon juice
3 tablespoons grated Parmesan cheese
2 to 3 tablespoons fresh parsley, chopped
Instructions
Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions until al dente. Drain, reserving 1 cup of the pasta water.
In a large skillet set over medium-high heat, melt 2 tablespoons of the butter. Add the shrimp, sprinkle with salt and crushed red pepper, and sauté until the shrimp are opaque and pink, about 2–3 minutes. Remove the shrimp from the skillet and set aside.
In the same skillet, melt the remaining butter. Stir in the minced garlic and cook for about 1 minute, just until fragrant.
Turn off the heat, then pour in the lemon juice, reserved pasta water, and grated parmesan. Stir until everything is well combined and the cheese is melting into the sauce.
Add the cooked spaghetti to the skillet, tossing until the pasta is evenly coated with the sauce.
Return the shrimp to the pan, toss gently, and garnish with chopped parsley. Serve immediately while hot.
