Spicy Corn Slaw
Ingredients
1 (14-ounce) package shredded coleslaw mix
2 cups corn kernels (fresh or frozen, thawed if using frozen)
¼ cup finely chopped jalapeño (seeds removed)
½ cup coarsely chopped fresh cilantro
3 green onions, thinly sliced
Dressing
½ cup mayonnaise
Juice from 2 fresh limes
2 tablespoons granulated sugar
1 teaspoon garlic powder
Salt and black pepper, to taste
Instructions:
Add the coleslaw mix, corn, jalapeño, cilantro, and green onions to a large mixing bowl. Toss everything together until evenly combined.
In a separate small bowl, whisk together the mayonnaise, lime juice, sugar, garlic powder, salt, and pepper until the dressing is smooth and well blended.
Pour the dressing over the slaw mixture and toss until all ingredients are thoroughly coated.
Refrigerate until ready to serve for the best flavor.
