Ingredients
The 3 Main Ingredients
Yellow cake mix — 1 box (18.25 oz), classic variety recommended
Cream cheese — 1 (8 oz) block, softened (full-fat for best texture)
Cherry pie filling — 1 can (21 oz) (blueberry, apple, or peach may be substituted)
Pantry Staples
Unsalted butter — ½ cup (1 stick), melted
Large egg — 1
Salt — a small pinch
Instructions
1. Prepare the Crust and Cheesecake Layer
Preheat the oven to 350°F (175°C). Lightly grease two 8×8-inch glass baking dishes, or one 9×13-inch dish.
In a mixing bowl, combine the cake mix, melted butter, egg, and salt. Stir just until a crumbly dough forms.
Press half of the mixture into each prepared dish (or all of it into a 9×13 pan), creating an even base.
In a separate bowl, beat the cream cheese until smooth and creamy. Spread it evenly over the crust layer.
2. Add the Cherry Topping
Spoon the cherry pie filling over the cream cheese layer, spreading gently while leaving a small border around the edges.
For a decorative touch, lightly swirl the cherries into the cream cheese using a knife.
3. Bake Until Set
Bake for 25–30 minutes, or until the edges turn lightly golden and the center is just set.
Remove from the oven and allow to cool completely, then refrigerate for at least 2 hours to ensure clean, neat slices.
4. Slice and Serve
Cut into squares and, if desired, dust lightly with powdered sugar before serving.
