Pizza Quesadillas with Pepperoni

Ingredients

1 teaspoon olive oil or unsalted butter (for sautéing)

1/4 cup finely diced yellow onion

1/4 to 1/2 cup diced bell peppers (any color, based on preference)

1/2 teaspoon Italian seasoning

1/2 teaspoon dried basil

Salt and freshly ground black pepper, to taste

8 flour tortillas, 8-inch size

1/2 to 1 cup marinara or pizza sauce, depending on how saucy you like it

1 cup shredded mozzarella cheese

4 to 6 ounces sliced pepperoni (regular or mini style)

Instructions:

Sauté the vegetables:

In a skillet over medium-high heat, warm the olive oil or butter. Add the diced onions and bell peppers, then season with Italian seasoning, dried basil, salt, and pepper. Cook for 3–4 minutes, stirring occasionally, until the vegetables are tender and fragrant. Remove from the skillet and set aside.

Assemble the quesadillas:

Lay out the tortillas on a clean surface. Spread a thin layer of marinara or pizza sauce over half of them. Evenly distribute the sautéed vegetables, pepperoni slices, and mozzarella cheese on top. Cover with the remaining tortillas to create full quesadillas.

Cook the quesadillas:

Return the skillet to medium heat. Cook each quesadilla for 2–3 minutes per side, pressing gently with a spatula, until golden brown and crispy on the outside and the cheese inside has melted. Repeat with the remaining quesadillas.

Slice and serve:

Remove from the skillet, cut into wedges, and serve hot with extra marinara for dipping if desired.
