Ingredients
2 Tbsp of olive oil
2 lb pork chops (about 4 oz ea.)
Hatch Green Chili Pepper Salt (about 2 tsp) You can adjust to your preferred taste!
1/4 cup chicken stock
1 lg white onion (sliced about 1/4″ thick)
Instructions:
Place pork chops in a large mixing bowl or a shallow dish and pour in the olive oil to begin seasoning. Make sure both sides are evenly coated.
Sprinkle Hatch Green Chili Salt on both sides of pork chops.
Heat pan to medium high heat with a bit of olive oil.
Arrange the pork chops in the pan with the hot oil.
This may need to be done in batches, depending on the size of your pan.
Cook for about 2-3 minutes per side till nicely grilled.
Remove pork chops and set aside to rest.
In a saute pan, add in your onion and cook for about 3 min till they are slightly translucent.
