No-Cook Coconut And Pecan Praline Treats

Ingredients

2 cups pecans

2 cups sweetened shredded coconut

1 1/2 cups granulated sugar

1 cup brown sugar

1/2 cup evaporated milk

1/2 cup light corn syrup

1/2 cup (or one stick) unsalted butter

1 teaspoon vanilla extract

1/2 teaspoon salt

Instructions

In a large saucepan, mix together granulated sugar, brown sugar, evaporated milk, corn syrup, and unsalted butter. Cook over medium-high heat, stirring constantly until the mixture is well combined and smooth.

Bring the mixture to a boil and let it boil for 3 minutes. Then remove the saucepan from heat.
Stir in the vanilla extract and salt until well incorporated.

Gently fold in the shredded coconut and pecans, stirring continuously for 3-4 minutes. The mixture will start to cool and thicken.

Using a tablespoon or a small scoop, portion out the mixture onto baking sheets lined with wax paper.

Allow the cookies to set at room temperature, or place them in the freezer for quicker setting. Once set, the cookies are ready to enjoy.
