Red Curry Noodle Soup

Ingredients:

shrimp

chicken or vegan broth.

onion,

green pepper,

celery

garlic

sesame seed oil

zucchini

carrots,

chickpeas,

red curry paste,

Sriracha,

red pepper flakes

sweet potato glass noodles

coconut milk

tomatoes chopped

cilantro,

jalapeños

Instructions:

Cook shrimp whole in a little bit of broth.

Sautéed onion, green pepper, celery and garlic in sesame seed oil,

Add zucchini and carrots, sautéed a few minutes more,

Add chickpeas, both shrimp broth and broth, red curry paste, Sriracha, red pepper flakes and let boil.

When it was ready, add sweet potato glass noodles and coconut milk.

Once the noodles were cooked, add chopped tomatoes, cilantro, jalapeños and shrimp.

I did not measure I did it to taste. Ate with a big smile, good to be home.
