Notes:

Hot Italian sausage can be very spicy, so be sure to use mild if you prefer a milder flavor. I didn’t add a lot of extra spices to the soup because the sausage gives so much flavor.

You can use fresh or frozen tortellini to make this soup. I use fresh, so just take into account the required cook time for the pasta when making your soup. Frozen tortellini may cool down your soup and take longer to come back up to a simmer.

If you have a leftover Parmesan rind, feel free to throw that in the soup as it simmers for some incredible flavor!

You can prep this soup ahead by chopping all of your vegetables. You can also cook the soup right through up until the point where you add the pasta, then cool and refrigerate and simply reheat and add the pasta before serving.

Sausage Choice: You can use mild or spicy Italian sausage based on your preference. Ground turkey or chicken sausage is a lighter alternative.

Vegetable Variations: Feel free to add other vegetables like spinach, zucchini, or bell peppers for extra nutrition and flavor.

Broth Options: Low-sodium chicken broth is recommended, but vegetable broth can be used for a vegetarian version.

Tomato Variety: For a more robust flavor, consider using fire-roasted diced tomatoes. Adjust the amount of tomato sauce to taste if you prefer a thicker soup.

Tortellini: Fresh cheese tortellini is recommended for the best texture. Frozen tortellini can also be used; just increase the cooking time slightly if needed.

Seasoning Adjustments: Taste the soup before serving and adjust the seasoning. You can add crushed red pepper flakes for heat or fresh herbs like basil or parsley for freshness.

Storage: Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. The tortellini may absorb some broth, so you might need to add a little water or broth when reheating.

Freezing: While you can freeze the soup, it’s best to freeze it without the tortellini. Cook the tortellini fresh when you reheat the soup to maintain their texture.

Serving Suggestions: Serve with grated Parmesan cheese on top and a side of crusty bread or a simple salad for a complete meal.

Customization: Feel free to get creative! Add beans for extra protein or different spices to make it your own.
