Ingredients

– 2 medium flour tortillas / burrito size

– 1/2 pound beef (rib-eye or pie top), cut into thin slices or cubes

– 1/2 medium onion, chopped

– 1/2 red pepper, diced

– 1/2 green pepper, cut into cubes

– 6 ounces diced mushrooms

– 3 slices provolone cheese (avoid aged cheese), cut in half

– 1 tablespoon light olive oil, divided

– 1 clove of minced garlic

– ¼ 1 teaspoon sea salt or to taste

– 1/8 teaspoon ground black pepper, or to taste

– 2 teaspoons mayonnaise optional

Instructions :

1) In a large frying pan, heat 2 teaspoons of oil. Once hot, add the minced meat. Season with salt and pepper and cook until the meat is completely tender. Removing from pan & covering to continue warm.

2) Meanwhile, finely chop the onion and dice mushrooms and peppers. Fry the vegetables in the same pan until soft, with another teaspoon of oil added if necessary.

3) Add beef to the pan with minced garlic, stir and cook until the meat is warm.

4) Sprinkle mayonnaise (if used) over the tortilla. Divide the filling between the tortilla and add it to one side of the tortilla. Cover the stuffing with cheese slices and close the tortilla

5) Heat a frying pan over medium heat. For a crunchy tortilla, add a little oil to the skillet. Place the tortilla in a hot skillet and fry until the cheese melts and the outer surface is golden and crunchy, stir once. Slice it and serve.
